This is one of the best kitchens I’ve ever worked in. I’ve done fine dining, pub dining and fast food restaurants but working here you’ve got more support than where I’ve been before. If you need some equipment, they’ll get it sorted straight away. So you’re under less pressure and you can do the things that you’re good at. It’s nice to have a company that supports you. There are busy times which are mainly after school during term time and the weekends obviously. But we get regular customers as well. The other day I had one customer in who had a starter, main and dessert and afterwards they said ‘I’m going to be your regular now’ and hey come in every week just for the food. I want to stay here for as long as I can. And I’ve been asked, that in the future when Hollywood Bowl Group open any new bowling centres or refurbish older ones, if I would go along and train the new chefs. I’d never have expected that when I started here.
